Johann Shiraz Cabernet

Jacob's Creek Johann Shiraz Cabernet honours Jacob's Creek founder Johann Gramp. It is a blend of Shiraz and Cabernet Sauvignon from top South Australian vineyards.
Individual parcels of fruit are destemmed and crushed to small static fermenters, where neutral yeast initiates fermentation. The ferments are monitored twice daily. Regular pump overs gently yet thoroughly extract colour and tannins.
Each ferment is pressed separately. They are then filled to French and American oak: the Shiraz to new barrels and the Cabernet to new and second use barrels. Natural malolactic fermentation and maturation occur in oak.
After 18 months, all the barrels are assessed on the tasting bench. The most suitable are chosen for the final blend.
Dense purple, Jacob's Creek Johann Shiraz Cabernet shows sweet fruits from the Shiraz, structure from the Cabernet and texture from the oak. Cellaring potential is 12 years.
